
What a winning combination! Cookin’ Greens Designers Mix
includes: chopped spinach, chopped collards, chopped rapini,
cut yellow beans and dicedonions.
Serve with fish, chicken, meat, tofu.
Ingredients
1 - 500g bag - Cookin’ Greens™ Chopped Kale
3 tablespoons olive oil, divided
1 medium onion, finely chopped (about 1 1/2 cups)
8 large garlic cloves, thinly sliced
1/2 pound spaghetti
2 teaspoons fresh lemon juice
Finely grated Parmesan cheese
Place potatoes in a medium sized pot of water.
Place over high heat.: Bring to a boil. Partially covered,
simmer for 8-10 minutes or until tender.
Drain well, set aside in bowl.
Heat large skillet over medium heat. Add oil. Add garlic,
sauté for 30 seconds. Add onions. Sauté over medium heat
for 5 minutes or until they begin to soften.
Add curry powder. Stir. Add Cookin’Greens Designer’s Mix.
Sauté for 5-7 minutes on low heat. Stir well.
Add potatoes. Heat through and season to taste with
freshly ground pepper and salt.
Squeeze lime juice over potatoes and greens.
