
An every-day fun meal solution for the entire family but
particularly for kids– a perfect blend of savoury and a
hint of sweetness.
Ingredients
4 Tbsp olive oil
1 lb lean hamburger meat* -
(*substitute with ground turkey, chicken, veal)
2 tbsp olive oil
2 cloves garlic ,minced
1 large onion , thinly sliced
2 cups Cookin’ Greens - Kale
1 can tomato paste, 5 1/2 oz
2 1/2 cups vegetable stock (or low sodium chicken stock)
¼ cup red wine vinegar
¼ cup sweet fancy molasses
2 tbsp soy sauce
2 tsp dijon mustard1 tsp chili powder
Method:
Heat 2 Tablespoons oil in wok or frying pan.
Sauté meat for 8-10 minutes or until meat is
evenly cooked through. Drain and reserve.
Clean wok, add remaining 2 tablespoons oil on medium heat.
Add garlic, sauté for 30 seconds, add onion. Cook, stirring
occasionally for 5 minutes or until onion has softened.
Add Cookin’ Greens -Kale. Sauté for 5 minutes on
medium- low heat, stirring often.
Add tomato paste, stock, vinegar, molasses, tamari and
mustard. Simmer for 10 minutes. 4. Add chili powder and
hamburger meat to mixture. Simmer for 5 minutes more.
Serve on top of hamburger buns or soft roll of choice,
noodles or rice.Tip: Use tempeh, a fermented soy
protein in place of hamburger for a vegetarian option.
